No, the iPhone SE 1st generation released in 2016 does not support eSIM.
Even after the iOS update, iPhone SE 1st generation still does not support eSIM. eSIM is a chip inside the motherboard of an iPhone that allows you to use mobile plans without inserting a physical SIM Card. The first gen iPhone does not have that chip inside so it cannot use with an eSIM no matter how many iOS updates come.
This new feature is only available in later models starting with the iPhone XS and XR. You can check out compatible iPhones here.
